At least for Gmail, I’m not sure how popular skinning other google services would be.

Why not? I login to iGoogle or Gmail and the site gives me a cookie. I setup my style sheet with some groovy browser-based menus like the ones in virb.com and yourminis.com, and whenever I login, I see all Google-owned sites the way I like ‘em. No white/blue/green to be seen.
